BETWEEN SEA AND LAND...
Sillage is to honor our French fishermen, it is the wake they leave behind them when they go to sea and come back to land bringing one of the most beautiful resources that our land has. It is not to sublimate them because they are already sublimated, but to make you discover a refined and technical work around these products and to associate them with audacious flavours. Because our first objective is to surprise you, to move you, and in the total respect of the product, of its seasonality, of its origin, and in the respect of those who allow us to make you discover them.
We offer you a menu based on products from our seas and oceans... but not only! Chef Gabriele Ferri, a native of the Piedmont region, will introduce you to Italian-inspired dishes and game from the region in season. In the dining room, we offer an open and inspiring wine list to help you discover more than just a finished product, but the entire know-how of a winegrower.
Sillage is the concretization of more than 15 years of experience, it is to transmit you emotions and memories through this art that we think is gastronomy... It is also to concretize our professional symbiosis and our common passion for this profession.
