The LAMBERT company is a family story is a 3rd generation business. The business has been established for 70 years. Mathieu BON is the youngest son of Philippe BON, he joined the family business in 2008. Sarah BON is the oldest daughter of Philippe BON and she joined the business in 2011, together they continue the family business with their knowledge and with the ancestral traditions of the Lambert generation.

The LAMBERT company markets approximately 1000 tons of oysters a year throughout distributors in France and overseas. The company has 10 hectares in the basin of Marennes-Oléron, and another 10 hectares in Paimpol, with Brittany producing 400 tons a year.

The Lambert company has also another 50 hectares of shallow ponds, which gives the Lambert company a wide variety of oysters from these ponds, both green and white.

The ponds are very ancient, they are reconverted salterns, which means that the ponds possess a very high mineral environment, rich in nutrients, which gives our oysters a finished aroma and flavour, typical of the region.
