In the heart of La Rochelle, travel through flavors and know-how. Thanks to a rich and intense career with the greatest starred Chefs which will notably lead him to UMAMI and IZUMI, Carlos is refining his techniques and forging an original culinary identity.
In 2018 he arrived in La Rochelle where he joined long-time friends with whom he shared the love of flavors and the addiction to the astonishment of the taste buds. Together they open the Ginger where they offer creative, healthy and varied cuisine of multicultural inspiration.
