A new address in La Rochelle opened by Chef Carlos Foito and his associates, KOYA showcases NIKKEI cuisine, which combines Japanese and Peruvian influences to make it one of the most varied, inventive and refined in the world. In the heart of La Rochelle, travel through flavors and know-how. Thanks to a rich and intense journey with the greatest starred chefs that led him to UMAMI and IZUMI, Carlos refined his techniques and forged an original culinary identity.
In 2018, he arrived in La Rochelle where he joined long-time friends with whom he shared a love of flavors and an addiction to the surprise of the taste buds. Together they opened Ginger where they offer creative, healthy and varied cuisine with multicultural inspiration.
It was to go further into the luxuriance of possibilities offered by Nikkei cuisine and especially to share this extraordinary cuisine with their friends and customers that the idea of KOYA came to Carlos and his associates.
