Our goal with La Dégust'? To introduce you to our premium oyster production and other seafood products in a unique setting amidst the marshes that make up our oyster farm in Ars-en-Ré, next to the port and market. Our tasting charter allows us to offer you products from our own farm, as well as those from other local producers upon request. Come and taste our premium oysters, shrimp, and seafood platters with a glass of white wine in the heart of the marshes in Ars-en-Ré ! The quality and freshness of our products are not the only values that drive our project. La Dégust' by L'Huître DoRê is a unique tasting venue that aims to introduce you to exceptional local products and allow you to experience true moments of escape in an authentic landscape while minimizing its environmental impact. Zero waste is our goal at La Dégust' ! This translates into recycling oyster shells, installing sorting bins on site and reducing plastic and cardboard waste to the maximum.

The Roll Oyster finishing process in our production ponds allows us to offer you exceptional size 3 and 2 oysters with a high meat content and incredible flavor. This unique process, co-invented by François Eric, replicates the natural tidal conditions of the sea within the marsh. The oysters can thus be automatically exposed to the water at the desired frequency, allowing them to develop and produce firm, flavorful meat.
