Nestled in nature and open from April to November, the oyster huts perfectly embody the charm of local Ré Island cuisine: simple and authentic. Not always easy to find, they are generally located right at the production sites, between the ocean where the oysters grow in the open sea and the salt marshes where they mature (in the claires) to reveal their full, briny flavor. Brought directly from the oyster beds that shape the island's landscapes, these shellfish go straight from the sea to your plate, promising to delight your taste buds! Available for direct purchase from the producer or to enjoy on-site, this ultra-short supply chain guarantees absolute freshness and intense flavor, much to the delight of gourmets!

Oysters: a local product and ancestral know-how

For centuries, oyster farming has been an integral part of the maritime culture of Île de Ré, as evidenced by the small Oyster Farm Museum. This traditional farm, located in Le Martray, traces the history and evolution of oyster farming techniques on this island since the Middle Ages. Even today, the work and passion of the dozens of shellfish farms, generally family-run, are passed down from generation to generation. Following the rhythm of the water and tides, oysters are produced year-round on nearly 550 hectares of offshore concessions, shared by oyster farmers in La Flotte, Loix, Sainte-Marie-de-Ré, Ars-en-Ré, and Le Martray.

1. The Port Buddies at the Fleet

A Le Corre family estate since 1966, this oyster farm is located on the cycle path that runs along the coast between La Flotte and Saint-Martin-de-Ré. Facing the sea, under wooden pergolas, oysters fresh from the tanks are served with great pride by the patriarch, Hubert Le Corre, or his daughter-in-law, Charlène, wife of Eric, who now manages the farm. A rustic and charming atmosphere, a view of the ocean —what more could you ask for to enjoy a delicious platter of homemade oysters or local shellfish ?

2. The Saltworker's Oyster Hut in La Couarde

Oyster farmers Jean and Thierry warmly welcome you to their small, almost secret tasting room nestled in the heart of the salt marshes. Accessible by the cycle path between La Couarde and Loix, towards the small port and its famous tidal mill, you can also reach it by car, but be mindful of cyclists. In an enchantingly peaceful setting with a view of the marshes, serenaded by migratory birds, savor their fine or special oysters, as well as clams, local organic shrimp raised in the marshes, whelks cooked on the plancha grill, or other typical products such as fish soup or samphire velouté ! A true delight!

3. Sophie at the Beach in La Flotte

Sophie à la Plage is an oyster bar opened in May 2026 by Yann and Sophie Pouneau, a couple who left the legal profession to dedicate themselves to their passion for the sea and oyster farming. The bar's main advantage lies in its ultra-short supply chain : the oysters come directly from the Huîtres Pouneau oyster beds, located just a few meters from the customer's table, guaranteeing impeccable freshness.

Around these oysters—offered plain, special, or prepared—the menu features a beautiful array of seafood (shrimp, langoustines, whelks, clams, mussels, etc.) to be enjoyed on a shared platter, accompanied by wines and beverages, many of which are local, such as Bières de Ré, Pineau, or wines from Domaine Pelletier. The venue is equally suited to lunch on the terrace overlooking the ocean, dinner from Wednesday to Saturday, or even private or professional events. A genuine and vibrant establishment, run by two passionate individuals who have made the close connection between production and tasting the very soul of their business.

4. The Féneau Cabin on the road to Loix

In the heart of the marshes between La Couarde and Loix, come and experience the authentic art of living on the Île de Ré. Visible from the road leading to Loix after the roundabout at La Passe, you don't stumble upon it by chance: here, word of mouth is key and you generally have to book in advance !

In this peaceful and unspoiled setting, this family-run restaurant serves seafood platters, the star of which is, of course, the oyster. Presented on a bed of seaweed, these seafood platters include brown shrimp, langoustines, brown crabs, oysters, whelks, periwinkles, clams, and cockles. Let yourself be seduced by this exceptional environment, soothed by the gentle lapping of the water that feeds the salt marshes.

5. Trousse Chemise Oysters in Les Portes-en-Ré

With its remote, end-of-the-world feel, this magical place offers an exceptional natural setting. Once again, it's impossible to stumble upon it by chance; you have to cross the Trousse Chemise golf course at the far end of the island to discover this little gem. Franck Moreau, the oyster farmer, has created a natural terrace overlooking the marshes where you can enjoy his shellfish and other cold seafood (whelks, shrimp). Take in the view of the Fier d'Ars, just a stone's throw from the nature reserve where hundreds of migratory birds nest. Enjoy without moderation, accompanied by a good glass of white wine, rye bread, and semi-salted butter. A delight!
