His focus naturally led him to a cuisine that showcases seafood, seasonal vegetables, and local producers.

      The oysters come from Jérôme Miet, an oyster farmer and refiner located just across the street from the restaurant. The fish are selected fresh each morning from the surrounding small ports. As for the herbs, fruits, and spices, they come mainly from local market gardeners and artisans. The menu changes regularly, depending on the day's catch and the chef's inspiration.
