  I'm a big fan of your cheeses, which are always excellent, with a wonderful variety of products, and an impeccable welcome in the store every time I visit. It's a real pleasure to have a cheese shop of this quality just a stone's throw from my home. However, I'd like to share a personal concern about the goat farming method. I've noticed that the animals are kept indoors all year round, without access to pasture, even though the cheese shop is surrounded by numerous fields that could perhaps be developed for this purpose. This raises questions for me, firstly, from an animal welfare perspective, but also about the impact this farming method can have on the nutritional value and flavor of the cheeses, especially those made with raw milk. Feeding exclusively hay, even though it may be of high quality, is no substitute for the plant diversity offered by pasture. My intention is in no way to judge, but simply to express my feelings as a customer concerned about these aspects. I hope this feedback can be taken as constructive feedback.
