Bistronomic cuisine in the heart of Saintes

Located in Saintes, Charente-Maritime, Restaurant l'IØDE welcomes lovers of seasonal cuisine in a warm and friendly setting. Easily accessible from the historic center of Saintes, this establishment showcases bistronomic cuisine that combines simplicity, generosity, and expertise. Through a regularly updated menu, the chef offers dishes prepared with fresh, local, and seasonal products, respecting the rhythm of deliveries and the region's producers.

The establishment caters to couples, families, and groups of friends alike, all looking to share authentic cuisine that showcases the region's rich culinary heritage.

      A cuisine inspired by seafood

At the helm of Restaurant l'IØDE, chef Benjamin Girard chose to open his first establishment in Saintes, a city ideally situated between land and sea. His professional background naturally led him to develop a cuisine where seafood plays a central role. Fish, shellfish, and crustaceans are prepared with care to create recipes that prioritize the quality of the ingredients and expertly cooked dishes.

Although seafood is the restaurant's signature dish, the menu isn't limited to it. Meat lovers will also find plenty to enjoy thanks to several dishes prepared with the same high standards. This diversity allows everyone to enjoy cuisine tailored to their tastes, while maintaining the bistronomic spirit that characterizes the establishment.

The recipes evolve with the seasons to showcase the best available produce. This approach allows us to offer a vibrant cuisine, where each visit can be an opportunity to discover new flavors.

Local and seasonal produce takes center stage on the plates.

The Restaurant l'IØDE in Saintes pays particular attention to the choice of its ingredients. Local and seasonal produce plays a central role in the creation of its menus. This philosophy allows them to work with ingredients selected for their freshness while favoring local suppliers.

This approach is reflected throughout the menu, from appetizers to desserts. Side dishes change according to the harvest, vegetables follow the seasonal calendar, and daily specials allow the chef to give free rein to his inspiration while respecting the availability of ingredients.

The cuisine offered is intentionally straightforward, allowing each ingredient to fully express itself. This quest for balance between authenticity and creativity contributes to the identity of Restaurant l'IØDE.

Very nice and pleasant. What we loved about the food was the surprising mix of different flavors and colors. The Bourgogne Aligoté white wine was a big hit with my friends; I wasn't too keen on the initial effervescence, but it improved. The desserts were fantastic, delicious, and again made with surprising and unusual combinations. Thank you to the team, we'll be back.
