Lambert Oysters Gourmet break around oysters at the La Rochelle market

The Oysters LAMBERT company is a family story that has lasted for 3 generations. Mathieu BON, grandson of the founder, took over the family business with his sister Sarah BON, in order to perpetuate ancestral know-how and tradition.

The company sells approximately 1,500 tons of oysters per year through various subsidiaries in France and abroad. The farm includes 10 hectares of offshore farms in the Marennes-Oléron basin and 10 hectares in Paimpol, Brittany, with a production of around 500 tons of oysters per year.

The 50 hectares of oyster beds owned by the company allow it to produce a very varied range of oysters.

The claires are former converted salt marshes, possessing a very mineral environment, rich in nutrients which gives the oysters a much appreciated local taste... The key word at Lambert establishments is: "quality".

Tasting Area :

• Every Wednesday, Thursday, Friday, Saturday and Sunday from 10 a.m. to 1 p.m. (off-season).
