    We tried Tampopo Ramen in La Rochelle with a "ramen" perspective, and the overall experience was decent, but still could be improved. I haven't traveled to Japan, but I'm a ramen fan. I make it at home, and it's truly my favorite dish. I chose a shoyu ramen. The dish wasn't bad and had solid foundations. The broth was good, clean, with an oil that provided a pleasant texture and a certain richness. You can tell there's skill and sincere intention in the bowl's preparation. But I found the overall quality lacked the precision to distinguish it from the best ramen I've tasted. The egg was okay, but a little too lightly marinated for my liking. Perhaps this was a deliberate choice, but I always expect a bit more flavor depth. The thing that bothered me the most was the noodles. They were overcooked, with a mushy texture and insufficient texture. Since the noodles in my partner's vegetarian ramen were firmer and more enjoyable, I think it was also a cooking issue. In any case, the noodles didn't impress me. They're a central element in a bowl of ramen; they're what should be truly perfect, in my opinion. Beyond the cooking, they weren't convincing. Knowing that I make my own at home, I suspect they weren't homemade. And it really deserves to be made by the chef. My partner ordered the vegetarian ramen, which was generally satisfactory. Surprisingly, there's no indication of the broth type, pork or chicken, either on the menu or from the staff. For a restaurant specializing in ramen, this is essential information. Strange... As sides, we ordered vegetarian and pork gyozas, as well as karaage. The gyozas were very successful, flavorful, well-made, and a hit with everyone, including the children. The karaage were also a big success with the kids. The taste was good, the seasonings just right, but they lacked crispness; the breading was too light to provide the expected texture of karaage. As for the service, the welcome was adequate and the waitress pleasant, even if her knowledge of ramen seemed somewhat limited. When I asked a simple question about the basics of the broths, the conversation revealed a certain vagueness. I had also considered chatting with the chef about his ramen, but he didn't seem very available at that moment. When we left, despite saying goodbye and wishing us a good day, there was no response from him, unlike the waitresses. And it wasn't very busy. We were practically the only customers until we left. To put the experience into perspective, compared to places like Ichigo Ichie (Nantes) or Kodawari (Paris), it falls somewhat short in terms of technical precision and execution. Discerning ramen lovers, myself included, will likely be left wanting more. The price is higher, but in my opinion, this is justified given the city of La Rochelle, where there will perhaps be fewer customers than in cities like Lyon, Nantes, Paris, etc. It's also important to consider the context. Opening the first ramen restaurant in La Rochelle is an excellent initiative, and a complex undertaking, especially with such a technically demanding dish. Those discovering ramen for the first time will undoubtedly find it a pleasant experience, and the restaurant deserves support. With more precision on certain key points, particularly the noodles, the cooking method, and the clarity of the menu, Tampopo Ramen could clearly improve its standards and consistency. I'll definitely go back to see how things have changed and maybe even chat with the chef, as I find that much more enjoyable. 🙏
