Savoir Huître Local oyster farming in Marsilly: combining expertise and freshness

Located in Marsilly, at Port de la Pelle, in Charente-Maritime, EARL Savoir Huître is an oyster farming business founded in 2025 by Thomas and Madeline, a passionate couple of producers. Situated near La Rochelle and the Bay of Aiguillon, the oyster shack welcomes oyster lovers all year round.

Their oysters are cultivated in oyster beds located in the Fier d'Ars, on the Île de Ré, an area renowned for the quality of its marine environment and its oyster farming expertise. Specializing in the production of open-sea oysters, the company offers fresh oysters for direct sale in Marsilly, from size 4 to 1, directly from the producer to the consumer.

Hours of operation :

• Tuesday to Friday : 10:00 AM to 5:30 PM
• Saturday : 9:00 AM to 4:30 PM
• Sunday : 9:00 AM to 2:00 PM
• Monday : Closed (except public holidays, December and school holidays )

In addition to oysters, Savoir Huître offers a selection of 100% Charente-Maritime products : seafood rillettes, tarama, Charentais crickets, flavored salts, samphire and ranges of wines.

The company also has a presence in several rural and local markets in Charente-Maritime, all year round except for July and August :

• Saturday morning, from 9 a.m. to 1 p.m.: Saint-Jean-de-Liversay
• Saturday afternoon, from 4 p.m. to 7 p.m.: Saint-Médard-d'Aunis
• Sunday morning, from 8 a.m. to 12:30 p.m.: Saint-Sauveur-d'Aunis

A tasting offer is also available in Marsilly, near La Rochelle, in an authentic setting with a sea view.
